How Auntie Da's Delights Started
"Auntie Da" is the name my oldest nephew Brock "gifted" me when he learned how to talk. I am now "Auntie Da" to 5 nephews, 1 niece and a few "bonus kiddos". I started making/freezing meals for my sisters when they brought home their newborns. I was asked to make meals as "gifts" for people who had surgeries, elderly grandparents, parents of newborns, and Christmas gifts.

Simply put, my meals are a great way to put a homecooked dinner on the table on the nights life is just too busy to do it yourselves. I also discovered it was an easy way for my husband to "cook" us a great meal during my long work days. He pops one in the oven and it is ready when I walk through the door. A win for us both!

School is back in full swing, which for many of you means more time running and less time in the kitchen. My home-cooked entrees are a great way to save time and provide a delicious, no fuss, hearty, comfort meal for your family on the nights you are just too busy to do it yourself.

Chicken Enchilada Casserole
This dish combines all the deliciousness of a popular Mexican treat, into one convenient casserole. Enchilada sauce, seasoned shredded chicken, black beans, corn and cheese layered between tortillas.
Auntie Da's Famous Meatloaf
This meatloaf is one of my top three most requested entrees! Tender and juicy on the inside, sweet and tangy on the outside. Ground meat mixed with breadcrumbs, seasonings, and ketchup produce an irresistibly tender and juicy meatloaf. The sweet tangy glaze adds amazing flavor to this classic dish.
Cheese Ravioli Bake
A delicious vegetarian lasagna casserole. Layers of cheese stuffed ravioli and sauce are topped with melty cheeses, allowing this casserole to carry all the flavors of a traditional Italian dish.
Tater-Tot Casserole
This simple yet delicious dish was a definite go-to at my grandparents' farm growing up. One cannot go wrong with tater-tots, ground meat, and a creamy gravy combined into one tasty casserole.
Smothered Pork-Chops
